Ingredients

  • 1.5 lbs (680g) boneless, skinless chicken breasts, sliced into strips
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium red onion, sliced
  • 2 tbsp olive oil
  • Juice of 1 lime
  • 3 garlic cloves, minced
  • 1.5 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne (optional)
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 4 low-carb tortillas or lettuce wraps
  • 1 avocado, sliced
  • Fresh cilantro, lime wedges, sour cream, or cheese

Method

  1. Toss the ChickenIn a bowl, mix chicken with half of the seasoning, 1 tbsp olive oil, garlic, and lime juice. Set aside to marinate for at least 15 minutes.
  2. Sauté the VeggiesHeat 1 tbsp olive oil in a large skillet over medium-high heat. Sauté the peppers and onions for 5–7 minutes until tender-crisp. Season with remaining fajita mix and remove from pan.
  3. Cook the ChickenIn the same skillet, cook chicken strips over medium-high heat for 5–6 minutes, turning occasionally, until fully cooked and slightly charred.
  4. Bring It All TogetherAdd veggies back into the pan with the chicken and toss to combine. Cook for another minute to heat through.
  5. ServeServe in low-carb tortillas, lettuce cups, or over a bed of cauliflower rice. Add avocado, lime, and your favorite toppings.
