Ingredients
- 4 boneless, skinless chicken breasts (~1.5 lbs / 680g)
- 3 tbsp olive oil
- Juice and zest of 1 large lemon
- 3 garlic cloves, minced
- 1 tbsp fresh thyme leaves (or 1 tsp dried)
- 1 tbsp fresh rosemary, chopped (or 1 tsp dried)
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 bunch asparagus (trimmed) or your favorite low-carb side
- Extra lemon wedges and herbs for garnish
Method
- Make the MarinadeIn a large bowl or zip-top bag, whisk together olive oil, lemon juice and zest, garlic, herbs, salt, and pepper.
- Marinate the ChickenAdd chicken and coat well. Let marinate in the fridge for at least 30 minutes, or up to 6 hours.
- Preheat the Grill or PanHeat grill or grill pan over medium-high heat. Lightly oil the grates or pan.
- Grill the ChickenGrill chicken for about 5–6 minutes per side, or until golden and internal temperature reaches 165°F (74°C). Rest for 5 minutes before serving.
- Roast or Grill the AsparagusToss with olive oil, salt, and pepper. Grill for 3–4 minutes or roast at 400°F (200°C) for 10–12 minutes.
- Plate and ServeServe the chicken over grilled asparagus or your chosen low-carb side. Garnish with fresh herbs and lemon wedges.
