Ingredients

  • 6 bone-in, skin-on chicken thighs (approx. 2 lbs / 900g)
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 3 tbsp unsalted butter
  • 4 garlic cloves, minced
  • Juice of 1/2 lemon
  • 1 tsp fresh thyme or rosemary (optional)
  • 1 tbsp chopped fresh parsley for garnish
  • Lemon slices for serving
  • 3 cups (300g) roasted broccoli or green beans

Method

  5. Return Chicken to SkilletSpoon garlic butter over chicken and simmer together for a final 2 minutes. Garnish with parsley and lemon slices.
