Top Tip

For the most striking presentation, use a mix of golden and red beets and slice them as thinly as possible with a mandoline or sharp knife.

Ingredients

For the Beet Carpaccio

  • 2 medium red beets, scrubbed
  • 2 medium golden beets, scrubbed
  • 1/3 cup crumbled goat cheese (or plant-based alternative)
  • 1/4 cup roasted pistachios, roughly chopped
  • Handful of fresh mint leaves, torn

For the Citrus-Mint Vinaigrette

  • Zest and juice of 1 orange
  • Juice of 1/2 lemon
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon honey or maple syrup
  • 1 tablespoon finely chopped fresh mint
  • Salt and freshly ground black pepper, to taste

Steps

  1. Preheat your oven to 400°F (200°C). Wrap each beet individually in foil and place on a baking sheet. Roast for 40–50 minutes, or until a knife slides in easily. Cool until safe to handle.
  2. Peel the beets and slice them very thinly using a mandoline or sharp knife. Arrange the slices in overlapping circles on a large serving platter or individual plates.
  3. In a small bowl, whisk together the orange zest and juice, lemon juice, olive oil, honey (or maple syrup), chopped mint, salt, and pepper until emulsified.
  4. Drizzle the citrus-mint vinaigrette generously over the beets.
  5. Sprinkle the crumbled goat cheese and chopped pistachios over the top. Scatter torn mint leaves for a fresh finish.
  6. Serve immediately, or chill for up to 1 hour before serving.
