Ingredients
- Versatile: Adjust herbs and vegetables to your liking.
- Comforting & Delicious: A crispy, golden pastry filled with a creamy, savoury chicken mix.
Method
- 2 chicken breasts
- 1 red onion
- 2 small yellow peppers
- 1 garlic clove (crushed and chopped)
- 1/2 pint (285ml) chicken or vegetable stock
- 100ml single cream
- Fresh herbs of your choice (e.g. parsley)
- Salt & pepper, to taste
- 1 pack ready-rolled puff pastry
- Carrots
- Runner beans
- Baby corn
- Oven-cooked chips
- Steam the chicken breasts until cooked through, keeping them tender and juicy.
- While the chicken is steaming, chop the onion and peppers.
- Heat a frying pan over medium heat, add a drizzle of oil, and gently fry the onion and peppers for about 5 minutes until softened.
- Stir in the chopped garlic and cook for another minute.
- Once the chicken is done, cut it into small pieces and add it to the pan. Season with salt and pepper.
- Pour in the chicken stock and let it simmer, allowing the liquid to reduce.
- Stir in the single cream to create a rich, creamy consistency. If the sauce needs thickening, mix 1 teaspoon of cornflour with a dash of cold water, then add to the pan.
- Finish with chopped parsley for an extra burst of freshness, then set aside.
- Preheat your oven to 200°C (180°C fan/gas mark 6).
- Cut the ready-rolled puff pastry into squares, one per person. The size depends on how hungry you are!
- Lightly score a smaller square inside each piece, being careful not to cut all the way through. This will act as a lid for your pie.
- Place the pastry squares on a baking tray and bake for around 25-30 minutes or until golden brown.
- Once the pastry is cooked, allow it to cool for a few minutes.
- Remove the scored lids and carefully hollow out the insides.
- Spoon in the creamy chicken filling, then place the lid back on top.
