Ingredients
- 2 medium red beets, scrubbed
- 2 medium golden beets, scrubbed
- 1/3 cup crumbled goat cheese (or plant-based alternative)
- 1/4 cup roasted pistachios, roughly chopped
- Handful of fresh mint leaves, torn
- Zest and juice of 1 orange
- Juice of 1/2 lemon
- 2 tablespoons extra-virgin olive oil
- 1 teaspoon honey or maple syrup
- 1 tablespoon finely chopped fresh mint
- Salt and freshly ground black pepper, to taste
Method
- Preheat your oven to 400°F (200°C). Wrap each beet individually in foil and place on a baking sheet. Roast for 40–50 minutes, or until a knife slides in easily. Cool until safe to handle.
- Peel the beets and slice them very thinly using a mandoline or sharp knife. Arrange the slices in overlapping circles on a large serving platter or individual plates.
- In a small bowl, whisk together the orange zest and juice, lemon juice, olive oil, honey (or maple syrup), chopped mint, salt, and pepper until emulsified.
- Drizzle the citrus-mint vinaigrette generously over the beets.
- Sprinkle the crumbled goat cheese and chopped pistachios over the top. Scatter torn mint leaves for a fresh finish.
- Serve immediately, or chill for up to 1 hour before serving.
