Method
- Combine millet, water, and a pinch of salt in a saucepan. Bring to a boil, reduce to low, cover, and simmer for 15–18 minutes until water is absorbed. Fluff and set aside.
- While millet cooks, bring a small pot of water to a boil. Gently lower in eggs and cook for 6–7 minutes for soft-boiled. Transfer to ice water, peel, and halve.
- Whisk together miso, soy sauce, rice vinegar, sesame oil, maple syrup, and enough warm water to make a pourable dressing.
