Flourless Dark Chocolate Almond Torte

Made with ground almonds and dark chocolate, it’s the kind of dessert that tastes like it came from a patisserie — but is surprisingly simple to bake at home.
Ingredients
- 200g dark chocolate (70% cocoa), chopped
- 150g unsalted butter
- 150g ground almonds (almond flour)
- 120g caster sugar
- 3 large eggs, room temperature
- 1 tsp vanilla extract
- 1/4 tsp fine sea salt
- Unsweetened cocoa powder, for dusting
- Optional: toasted flaked almonds or raspberries, to serve
Method
- Melt the ChocolatePreheat oven to 170°C (340°F). Grease and line a 20cm springform tin. Gently melt the dark chocolate and butter together over low heat or in a bain-marie. Stir until smooth, then set aside to cool slightly.
- Whisk the EggsIn a bowl, whisk eggs and sugar until pale and slightly thickened. Stir in vanilla extract.
- CombineSlowly fold the melted chocolate mixture into the eggs. Add ground almonds and salt, folding gently until fully combined.
- BakePour batter into the prepared tin and smooth the top. Bake for 30–35 minutes, until the centre is just set but still slightly fudgy.
- Cool & ServeAllow to cool completely in the tin. Dust with cocoa powder and serve with berries or lightly whipped cream.
